LOL now try remembering and explaining "bittersharp." Here hardly anyone recalls that cider apples are mostly different from other categories, although some dessert or cooking apples will double as good cider apples. But you absolutely need the bittersharps, the true cider-only apples, or what you get is too-sweet apple juice.
