Today I made a personal omelette with fresh herbs picked from my yard.
I have some herbs well established including mother-of-thyme, garlic chives, lemon balm, and sage.
I have others that are still tiny but could spare me a leaf: parsley, cilantro, leek, dill, basil.
I picked a good palmful of leaves and tore them down to about fingernail size. I mixed those into the eggs and poured everything into the skillet, rather than as filling.
It came out quite well. Every bite had a subtly different flavor. Fresh-picked herbs are much nicer in an omelette than dried herbs. :D I really like being able to walk around my yard and pick things to eat.
