Today I'm making strawberry banana bread using this recipe, just replacing the nuts with dried strawberries. This used up the last of the overripe bananas. \o/
It's our family favorite banana bread version. The nice thing about using dried fruit is that it absorbs moisture from the batter, becoming soft and juicy -- rather than making a soggy spot in the bread like fresh fruit sometimes does.
Basically, that's my base recipe for hippie quickbread. It can be made with various mix-ins like nuts or seeds or dried fruit, different spices, other types of fruit puree than applesauce and mashed bananas, multigrain flour instead of whole wheat, etc. I've put peanut butter in it. I've put rolled oats in it. Experimenting with different flavors is fun. But the runaway favorite is the dried strawberries.
